    • 4 Herb & Sons Chicken-Free Schnitzels
    • 1 corn cob, husk and silk removed
    • 1/2 red onion, finely chopped
    • 1 long red chilli, seeded, finely chopped (optional)
    • 1 tbsp sweet chilli sauce
    • 1/3 cup (100g) vegan mayonnaise
    • 1 lime, juiced
    • 4 round bread rolls, split, toasted
    • 2 avocados, stoned, peeled, coarsely mashed
    • 40g baby rocket leaves

    4 Method Steps

    • Preheat oven to 180°C. Line a baking tray with baking paper. Place schnitzels on the lined tray. Bake, turning once, for 20 mins or until golden and heated through.
    • Meanwhile, heat a chargrill on medium. Cook the corn, turning, for 10 mins or until tender and charred. Cool slightly. Use a small serrated knife to cut down the side of the cob to release the kernels. Transfer to a bowl.
    • Add onionchilli, if using, and sweet chilli sauce to the corn in a bowl. Stir to combine. Combine the mayonnaise and lime juice in a separate bowl.
    • Cut each schnitzel in half. Place roll bases on serving plates. Spread with avocado. Top with schnitzel, corn mixture and rocket. Spread roll tops with mayonnaise mixture and place on the burgers. Serve immediately.
