  • For a protein-packed brekky, try these quick and easy scrambled eggs with smoked salmon.

    5 Ingredients

    • 2 eggs
    • 1 tbsp skim milk
    • 30g baby spinach, coarsely chopped
    • 1 slice (38g) wholegrain sourdough bread, toasted
    • 25g smoked salmon slices

    2 Method Steps

    • Whisk together the eggs and milk until well combined. Season.
    • Heat a small non-stick frying pan over medium heat. Lightly spray with oil. Add the spinach and cook, stirring, for 1 minute or until just wilted. Add the egg mixture and cook, folding gently with a wooden spatula, for 2-3 minutes or until eggs are just set. Top the toast with the egg mixture and salmon. Season with pepper to serve.
