  • We've recreated the 'big breakfast' with this satisfying brekkie pizza recipe. Not only is it delicious, it's an easier and cheaper way to feed a crowd.

    10 Ingredients

    • 6 short-cut bacon rashers
    • 2 Coles Classic Pork Sausages, casings removed
    • 100g brown mushrooms, sliced
    • 2 large wholemeal pita breads or pizza bases
    • 1/2 cup (125ml) tomato passata
    • 1 cup (100g) Coles Australian Pizza Blend Shredded Cheese
    • 60g pkt Coles Australian Baby Spinach
    • 100g vine-ripened cherry tomatoes
    • 6 Coles Australian Free Range Eggs
    • Baby rocket leaves, to serve

    3 Method Steps

    • Preheat oven to 200°C. Heat a large non-stick frying pan over medium-high heat. Cook the bacon for 2 mins each side or until golden brown. Transfer to a plate lined with paper towel. Add the sausage to the pan and cook, stirring with a wooden spoon to break up into lumps, for 5 mins or until golden. Transfer to the plate with the bacon. Add mushroom to the pan and cook, stirring, for 1-2 mins or until just tender.
    • Lightly grease 2 large baking trays. Place the pita breads or pizza bases on the prepared trays. Spread evenly with the passata. Sprinkle with half the pizza cheese and top with the spinach, bacon, sausage, mushroom and tomatoes. Sprinkle with the remaining cheese. Crack 3 eggs onto each pizza.
    • Bake for 12-15 mins or until the cheese melts and the bases are crisp. Sprinkle the pizzas with rocket and cut into wedges to serve.
