    7 Ingredients

    • 50g baby spinach
    • 75g (1/2 cup) cooked quinoa, warmed
    • 1 soft-boiled egg, peeled, sliced
    • 1/4 avocado, sliced
    • 1 tsp fresh lemon juice
    • 1 tsp extra virgin olive oil
    • 2 tsp chopped roasted unsalted almonds

    2 Method Steps

    • Place the spinach in a colander. Pour over boiling water. Use clean hands to squeeze any excess liquid from the spinach.
    • Arrange quinoa, spinach, egg and avocado in a serving bowl. Drizzle over lemon juice and olive oil. Top with almonds to serve.
