50g baby spinach
75g (1/2 cup) cooked quinoa, warmed
1 soft-boiled egg, peeled, sliced
1/4 avocado, sliced
1 tsp fresh lemon juice
1 tsp extra virgin olive oil
2 tsp chopped roasted unsalted almonds
2 Method Steps
Place the spinach in a colander. Pour over boiling water. Use clean hands to squeeze any excess liquid from the spinach.
Arrange quinoa, spinach, egg and avocado in a serving bowl. Drizzle over lemon juice and olive oil. Top with almonds to serve.
