  • Love pizza? Love fried rice? You are in luck! This has the best of both worlds - a crispy rice crust and a cheesy topping. You can change up the recipe by adding any of your favorite condiments on top of the base.

    11 Ingredients

    • 250g (1 1/4 cups) medium-grain white rice
    • 2 tbsp olive oil
    • 1 small brown onion, finely chopped
    • 2 garlic cloves, crushed
    • 1 tbsp tomato paste
    • 1 tsp dried Italian herbs
    • 40g (1/2 cup) finely grated parmesan
    • 250ml (1 cup) tomato pasta sauce
    • 50g sliced ham, chopped
    • 200g (2 cups) grated pizza blend cheese
    • Fresh basil leaves, to serve

    5 Method Steps

    • Preheat oven to 200C/180C fan forced. Cook the rice in a large saucepan of boiling water for 10 minutes or until just tender.
    • Meanwhile, heat 1 tablespoon of the oil in a 25cm (base measurement) ovenproof frying pan over medium heat. Add the onion and cook, stirring occasionally, for 5 minutes or until softened. Add the garlic and cook for 30 seconds or until aromatic. Add the tomato paste and cook, stirring, for a further 30 seconds.
    • Transfer mixture to a large mixing bowl and add the rice, dried herbs and parmesan. Season well. Stir until combined. Use paper towel to wipe out the pan. Drizzle remaining oil into the pan and add the rice mixture. Spread out to form an even layer and press with the back of a large spoon to compact. Place over medium-high heat and cook for 10 minutes, moving the pan occasionally so an even crust forms underneath. Remove from heat.
    • Spread the pasta sauce over the rice crust. Sprinkle with ham and cheese. Bake for 15 minutes or until the cheese is melted and golden.
    • Serve pizza topped with basil leaves.
