  • This is the ultimate meal prep chicken recipe. It’s so easy to make (you literally place everything in a slow cooker and stir!) and can be used in many ways. Try it in tacos or burritos, on sandwiches or wraps, as a pizza topping, a jacket potato filling or served with rice or pasta. It’s even great with a side of veg or mixed through salad.

    9 Ingredients

    • 500g Coles RSPCA Approved Chicken Breast Fillets
    • 200g chicken thigh fillets, fat trimmed (see notes)
    • 2 tbsp brown sugar
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1/2 tsp ground paprika
    • 1/4 tsp Mexican chilli powder
    • 250ml (1 cup) smoky barbecue sauce
    • 1 tbsp apple cider vinegar

    3 Method Steps

    Place the chicken in the slow cooker. Add the remaining ingredients and stir until combined.
    • Cover and cook on Low for 6 hours, turning the chicken halfway through cooking (see notes).
    • Transfer chicken to a plate or board. Use 2 forks to coarsely shred the chicken. Return chicken to slow cooker and stir with the liquid until well combined.
