Caramelized onion and mushroom pizza

250g pkt fresh pizza dough
1 tbsp olive oil
150g pkt Coles Australian Mixed Exotic Mushrooms, thickly sliced or torn
1 red onion, thickly sliced
1 garlic clove, crushed
1 tbsp caster sugar
1 tbsp red wine vinegar
1/2 cup (50g) coarsely grated pizza cheese
1/4 cup sage leaves
100g gorgonzola, crumbled
Baby rocket leaves, to serve
4 Method Steps
Place the pizza dough on a lightly floured work surface. Lightly cover and set aside for 1 hour to bring to room temperature.
Preheat oven to 230°C. Line a large baking tray with baking paper. Heat the oil in a large frying pan over high heat. Add the mushroom to the pan and cook, turning, for 2 mins or until golden brown. Transfer to a plate.
Reduce heat to low. Add the onion and garlic to the pan. Cook, stirring occasionally, for 10 mins or until the onion softens. Add the sugar and vinegar. Cook, stirring, for 3 mins or until the onion is slightly caramelised.
Roll out the pizza dough to a 40cm disc. Place on the lined tray. Sprinkle with the pizza cheese. Top with the mushroom and onion mixture. Sprinkle with the sage and gorgonzola. Bake for 15 mins or until the base is golden brown. Season. Sprinkle the pizza with the rocket to serve.
