Place the flour, sugar and baking powder in a small bowl. Use a fork to whisk and combine.
- Make a well in the middle of the flour mixture. Add the egg, milk and vanilla. Whisk until a smooth batter forms. Set aside for 10 minutes to rest.
- Heat a large non-stick frying pan over medium-low heat. Brush the pan with butter. Carefully pour in about two tablespoonsful of the batter. Repeat to make 3 pancakes. Cook for 1-2 minutes or until bubbles appear on the surface. Turn and cook for a further minute. Serve with yoghurt and berries.
