  • These easy, fluffy pancakes made with self-raising flour, eggs, milk and baking powder are the perfect single serve breakfast or brunch.

    9 Ingredients

    • 40g (1/4 cup) self-raising flour
    • 3 tsp caster sugar
    • 1/4 tsp baking powder
    • 1 egg, lightly whisked
    • 1 tbsp milk
    • 1/2 tsp vanilla extract
    • Melted butter, to brush
    • Vanilla yoghurt, to serve
    • Mixed berries, to serve

    3 Method Steps

    Place the floursugar and baking powder in a small bowl. Use a fork to whisk and combine.
    • Make a well in the middle of the flour mixture. Add the eggmilk and vanilla. Whisk until a smooth batter forms. Set aside for 10 minutes to rest.
    • Heat a large non-stick frying pan over medium-low heat. Brush the pan with butter. Carefully pour in about two tablespoonsful of the batter. Repeat to make 3 pancakes. Cook for 1-2 minutes or until bubbles appear on the surface. Turn and cook for a further minute. Serve with yoghurt and berries.
