2 pizza bases
1 cup basil leaves
2 tbsp olive oil
1 tbsp lemon juice
2 garlic cloves, crushed
1 tsp lemon zest
6 bocconcini, thinly sliced
200g Perino tomatoes, halved
1 small red onion, thinly sliced
150g pkt Tassal Smoked Tassie Salmon
Basil leaves, extra, to serve
Lemon zest, extra, to serve
3 Method Steps
Preheat oven to 240°C. Line 2 baking trays with baking paper. Place pizza bases on the lined trays.
Place the basil, oil, lemon juice, garlic and lemon zest in a food processor and process until the mixture is smooth. Season.
Spread basil mixture evenly over pizza bases on the trays. Top with bocconcini, tomato and onion. Lightly spray with olive oil spray. Bake for 6-8 mins or until the bases are crisp. Arrange salmon on pizzas. Sprinkle with extra basil and extra lemon zest. Season.
