    5 Ingredients

    • 400g pkt baby potatoes with parsley and butter
    • 400g pkt broccoli, cauliflower, pumpkin and sweet potato
    • 8 lamb loin chops
    • 1 cup (120g) frozen peas
    • 1/3 cup (80g) tomato chutney, to serve

    4 Method Steps

    • Preheat oven to 200°C. Spray a large baking tray with olive oil spray. Pierce the lid of the potato packet twice. Cook in the microwave on high for 5 mins. Spread the vegetables and potatoes on the baking tray and roast for 20 mins or until tender and golden brown.
    • Meanwhile, heat a large frying pan over medium-high heat. Lightly spray the lamb with olive oil spray and cook, in batches, for 3-4 mins each side or until browned and cooked to your liking.
    • Place the peas in a microwave-safe dish. Cover and cook in the microwave for 2 mins or until heated through.
    • Serve the lamb, peas and vegetables with tomato chutney.
