  • These super easy savoury muffins are perfect for lunch boxes, full of cheesy flavour that kids love. They're freezer-friendly to, so you can always have some ready to go.

    11 Ingredients

    • 2 cups self-raising flour
    • 2 tsp baking powder
    • ½ tsp smoked paprika
    • Pinch salt
    • 200ml milk
    • 100g butter, melted
    • 2 eggs
    • 1 tsp vinegar
    • 200g DON Mild Hungarian Salami, diced, plus extra for top of muffins
    • 4 spring onions, sliced
    • 150g comte or gruyere cheese, grated

    5 Method Steps

    • Pre-heat oven to 180°C (160°C fan-forced). Line a muffin tray with paper cases.
    • Mix the flourbaking powderpaprika and salt in a large mixing bowl. In a separate bowl, whisk together the milkmelted buttereggs and vinegar. Add to dry ingredients and mix until just combined.
    • Fold in the salamispring onion and most of the cheese, leaving a large handful to sprinkle over the muffins later.
    • Spoon batter between prepared cases and top with remaining cheese and some additional salami. Bake for 18-20 minutes or until they are golden and well risen. They can be served warm or cold.
    • Accompany with a side salad for a substantial lunch, or pack into lunchboxes as is.
