Whip together these cheat's Mediterranean pizzas for a quick and healthy lunch.

9 Ingredients
4 x 40g wholegrain wraps
90g (1/3 cup) no-added-salt tomato paste
2 zucchini, thinly sliced
1 yellow capsicum, deseeded, thinly sliced
250g cherry tomatoes, halved
125g can black beans, rinsed, drained
100g Greek feta, crumbled
60g baby rocket
2 tsp balsamic vinegar
2 Method Steps
Preheat oven to 210C/190C fan forced. Line 2 large baking trays with baking paper.
Place wraps on prepared trays. Evenly spread with tomato paste. Divide the zucchini, capsicum, tomato, beans and feta among wraps. Bake for 10-12 minutes or until golden and crisp. Sprinkle with rocket and drizzle over balsamic to serve.
