  • Whip together these cheat's Mediterranean pizzas for a quick and healthy lunch.

    9 Ingredients

    • 4 x 40g wholegrain wraps
    • 90g (1/3 cup) no-added-salt tomato paste
    • 2 zucchini, thinly sliced
    • 1 yellow capsicum, deseeded, thinly sliced
    • 250g cherry tomatoes, halved
    • 125g can black beans, rinsed, drained
    • 100g Greek feta, crumbled
    • 60g baby rocket
    • 2 tsp balsamic vinegar

    2 Method Steps 

    • Preheat oven to 210C/190C fan forced. Line 2 large baking trays with baking paper.
    • Place wraps on prepared trays. Evenly spread with tomato paste. Divide the zucchinicapsicumtomatobeans and feta among wraps. Bake for 10-12 minutes or until golden and crisp. Sprinkle with rocket and drizzle over balsamic to serve.
